One of the prettiest leafy vegetables we have seen - leaves are deep fuchsia-purple and highly serrated, giving the plants a frilly quality which is great for adding volume to salads. Edible at all stages from microgreens, to baby greens and beyond - baby leaves are mildly spicy while full sized plants provide quite a kick that can be mellowed and delicious with braising. Plants grow fast and are fairly cold hardy into the fall, but will bolt in the heat of the summer. The yellow flowers can be eaten raw as a spicy and edible garnish, while the flowering stems cook up beautifully like broccoli in a stirfry. When grown in warmer conditions or under row cover, plants may be more dark green than purple, so grow uncovered in cooler conditions for maximum "purpleness."

Mustard greens can be grown in the spring, summer, and fall, though they prefer an air temperature range of 60 - 75° . Direct sow seeds outdoors 4/15 - 8/30. For baby greens, broadcast sow seeds ½” deep, 60 seeds per square foot. For mature leaves, sow seeds 1” apart in rows 18” apart. Days to germination: 4 - 10. Sow every 3 weeks for continuous harvest, or let them re-seed themselves to have low maintenance self-sowing, edible “weeds”. Keep well watered during hot weather. It can grow in part shade. Tolerant of light frosts.
