Molokhia is a summer crop that does not tolerate frost. Start seeds indoors in April. Plant seeds 1/8" deep. Germination happens faster at 80°F. Transplant outside into fertile, well drained soil in sunny location, after chance of frost has passed (after 5/21). Plant spacing 12-18". Grows faster with irrigation and fertilization.
After plants reach ~2' tall, harvest individual leaves or cut 6" branches and strip the leaves off of the stems. Leaves are usually cooked but they can be eaten raw or dried. See Palestinian Molokhia recipe here.
Allow seed pods to mature completely on plant, until brown and dry - ripe seeds inside should be blue-green (almost black) and angular. Open pods to remove seeds, then winnow to clean. Harvest seeds from as many plants as possible to preserve diversity.
