Czech Style Roast Duck
Czech Style Roast Duck

Ingredients:

1 (5lb.) Duck
1 Tbsp salt
(Optional) pepper to taste
(Optional) 1 tsp caraway seeds

Instructions:

1. Wash dressed duck and dry thoroughly. Sprinkle with salt and pepper.

2. Place in roaster and sprinkle caraway inside and over duck.

3. Roast duck uncovered on a rack in roaster to drain away excess fat. Bake at 400 degrees for 1/2 hour, or until duck has been browned. Reduce oven to 350 degrees and roast 30 mins to the pound - about 2 1/2 to 3 hours. Baste occasionally, if needed. Low broil at the end for crunchy skin.

4. Cut into serving pieces. Traditionally served with potato dumplings and sweet-sour cabbage.
