Edible blue flowers with a delicate cucumber flavor. Toss eye-catching flowers on top of salads or add them as a unique garnish to beverages and sweets. For a creative twist, freeze them into ice cubes! 

Make tea from fresh or dried flowers and leaves. Young leaves are edible when cooked tasting a bit like spinach or nettles - do not eat mature leaves as they will be fuzzy in your throat (Erica speaks from experience!). We enjoyed borage stuffed ravioli on our trip to Italy in 2018 - it was delicious! 

Erica & Mike at N&N Farm have been growing borage for 30 years and absolutely love it! Old-school organic gardening books say every organic garden needs borage because it is said to be a companion plant, its sweet nectar makes it a bee magnet, attracting beneficial insects & pollinators. Plants will re-seeds enough to come back every year but not enough to become a weed.

Sow seeds outside directly into garden soil 5/20 - 7/31. Plant seeds 1/4-1/2" deep, 3 seeds together in a patch - space patches 12" apart. Keep seeds moist. Days to seed germination: 7-14 days. Thin to the strongest plant (remove weak plants leaving 1 strongest plant). Protect plants from deer and groundhogs. Alternatively, sow seeds inside into biodegradable pots 4/15-5/15 - transplant them by planting the entire pot in the ground so that you don't disturb the plant's roots.
