Save Your Homegrown Goodness by Freezing
It's Easy Peasy!
Here's a list of homegrown foods that are super easy to preserve by freezing. No need to stay up until 2am canning in a hot kitchen when you can just throw things in the freezer. Ziplock bags work best. You can use glass jars but be careful not to break them when thawing.
Freeze Whole: tomatoes, garlic scapes, okra
Chop & Freeze:
- peppers & tomatoes
- sweet corn - use knife to cut kernels off ears
- winter squash - cut in half, scoop out seeds & freeze halves
Roast & Freeze: tomatoes, peppers, broccoli, cauliflower, beans, peas, greens, okra, garlic (roast these goodies in the oven with oil, salt and any desired spices and then throw them in the freezer!)
Blend & Freeze: basil, garlic scapes (blend in food processor with oil and seasonings and freeze in ice cube trays then transfer to ziplock bags for more efficient storage)
Blanch & Freeze: Broccoli, cauliflower, greens, leeks, beans & peas
