These fall veggies are cold hardy and keep giving as the days get shorter and colder. Start seeds in September, August, or July (see Fall Planting Dates). Plant garlic bulbs in October or November for a bountiful harvest next summer.

Many greens preserve well with fermentation, freezing and/or root cellaring.
